Blueberry Cream Cheese YUM

Easy and delicious and perfect for a summer time picnic.

Ingredients

  • 1 cup butter
  • 1 ½ cup all-purpose flour
  • 8 ounces softened cream cheese
  • 1 cup powdered sugar
  • ¼ cup milk
  • ½ cup water
  • 1 ¾ cup granulated sugar
  • 4 cups washed and dried blueberries
  • 6 tablespoons cornstarch
  • 12 ounces whipped cream

Instructions

  1. Preheat oven to 350 degrees.
  2. Melt 1 cup butter and mix with 1 ½ cup all-purpose flour.
  3. Press mixture evenly into a greased 9 X 13 oven safe dish.
  4. Bake crust for 20 minutes and cool.
  5. Mix 8 ounces softened cream cheese, 1 cup powdered sugar and ¼ cup milk together.
  6. Spread over the cooled crust and place back in the freezer.
  7. Mix ½ cup water, 1 ¾ cup granulated sugar, 4 cups washed and dried blueberries and 6 tablespoons cornstarch in a medium saucepan.
  8. Bring to boil ad and cook 3 minutes until thickened. COOL!!!
  9. Pour cooled blueberry topping over cream cheese layer.
  10. Top with 12 ounces whipped cream.
  11. Cover and refrigerate until ready to serve.
