Some Like It Hot!!!

Let’s go ahead and drop a warning label on this post.

This stuff is HOT (in more ways than one).

If you are looking for an appetizer for Cinco de Mayo, this is it, but you better have some ice-cold beer on tap or some milk or something super cold that fights heat on standby.

I remember the first time I ever had a jalapeno popper. I was in a bar in Tennessee and was way to young to be there. I wasn’t drinking but I was scarfing down these things they kept bringing to the table. They were fried. They were crispy. They were delicious. But I don’t remember them being this dang hot!

The next time I make these, I will absolutely READ the label. I grabbed a bag of peppers from the grocery and on the label in BIG BOLD LETTERS, it said HOT! I guess I thought they were kidding.

Seriously though, they do sell peppers that range from mild to fire breathing so be sure you know what you are buying before you start.

This appetizer is super easy and only has a few ingredients so it is perfect for busy moms and Cindo de Mayo.

All you have to do is wash and slice peppers.  Be sure to remove the seeds.

Mix the softened cream cheese, lime and salt and pepper.

Note:  This stuff is delicious right by itself and would be great served many different ways.

Fill the peppers with the cream cheese mixture and place on greased baking sheet.

Bake at 350 degrees for about 15-20 minutes or until browned.

Grab an ice cold beverage of your choice and enjoy your baked poppers while you celebrate Cinco de Mayo with your friends.

Side note…I bet if you served this with a little bacon….Oh YUMMM!

Cinco de Mayo Jalapeño Poppers - Baked Not Fried

Ingredients

  • 10 Jalapeños Make sure you check the heat level!
  • 1 Bar Philadelphia Cream Cheese Softened
  • 1 Lime
  • Salt and Pepper (to taste)

Instructions

  1. Heat oven to 350 degrees.

  2. Wash and prepare peppers.  Slice in half lengthwise and remove seeds.

  3. Mix softened cream cheese, the juice of one lime and salt and pepper to taste.  (This stuff is delicious!)

  4. Place cream cheese mixture into peppers and top with a little lime zest.

  5. Place peppers on greased baking sheet into oven.

  6. Bake 15-20 minutes until top is browned.
