It’s Snowing!!!

It’s snowing at my house!  What about yours?

No…not that kind of snow.  Not the kind that melts into slush and people ruin when they play in it but the kind that warms your soul and makes you dream about your childhood.

Have you ever made these?

Some people call them snowballs (I am guessing because that is how they look).  I have seen other people call them Mexican Wedding Cookies (no idea why) or Russian Tea Cakes (more of a ball than a cake but oh well, or Pecan Sandies (now that’s a name I can get behind).  Maybe the name just depends on the region you are from or more than likely…you call them what your momma or your grandma called them.

First off, these cookies (let’s just call them cookies for simplicity sake) are coated in the sweetest and softest powdered sugar around. On a side note, you could probably drown just about anything in powdered sugar and I’d called it SPECTACULAR.   Back to the cookies, they are flaky and buttery and full of tiny pieces of nuts (your favorite nut but I always use pecans) that just give you that perfect crunch.

Most people make these little decadent bites to kick off the Christmas season along with 1000 other types of goodies they make, but I would rather make them as a stand alone and the easiest dessert to ring in Valentine’s Day.

According to Ms. Crocker, that would be Betty, these little cookies should be your most anticipated cookies of the whole season.

Grandma's Snowballs


Ingredients

  • 1 cup butter softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla
  • 2 1/4 cups Gold Medal all-purpose flour
  • 3/4 cup finely chopped nuts
  • 1/4 tsp salt
  • extra powdered sugar

Instructions

  1. Preheat oven to 400 degrees.

  2. Mix softened butter, 1/2 cup powdered sugar and vainall in a large bowl.

  3. Stir in flour, nuts and salt until a dough forms.  The dough will appear lumpy.

  4. Shape dough into 1 inch balls and place about 1 inch apart on ungreased cookie sheet. 

  5. Bake 10-12 minutes or until set but NOT brown.  

  6. Remove from cookie sheet and cool on wire rack.

  7. Roll still slightly warm cookies in powered sugar and place back on wire rack.

  8. Roll in powered sugar one additional time.  

  9. ENJOY!
