Old Fashioned Southern Sugar Cake

Let me go ahead and say “I’m sorry.” Odds are this won’t be the only dessert that I share this season that is perfect for or made with strawberries.  It also won’t be the lowest thing in fat or carbs that you will eat today.

Saturday, my little and I spent the afternoon picking some juicy and delicious berries at a local U-Pick farm.

Two buckets and a couple of hours later (because she has to look at every single berry in the field), we were home to whip up this delish Old Fashioned Southern Sugar Cake.

 

This cake is the perfect base for just about any topping you can come up with.  It kind of reminds me of angel food cake but my version turned out quite a bit more dense.

Even though it is a little on the plain side, it still gave me all the feels and flashbacks to something my grandma would have made and served on a Sunday afternoon after church.

I can’t wait for our blueberries to be ripe to make some blueberry sauce to go on top.  Ice cream, peaches, raspberries, you name it…it will be delish.

Just remember…when you are baking your cake, the top will brown quickly, that is ok!  It will still turn out lovely.

Old Fashioned Southern Sugar Cake

An old fashioned cake like your grandma used to make that can be topped with almost anything.  Yummy and delishious and perfect for Spring.

Ingredients

  • 1/2 cup Vegetable Shortening
  • 1 cup Milk I used 2%
  • 1 1/2 tsps Vanilla Extract
  • 1 tsp Salt
  • 4 tsps Baking Powder
  • 1 1/2 cups Sugar Granulated
  • 2 Cups All Purpose Flour PLUS...2 Tablespoons
  • 4 Egg whites Large
  • Powdered sugar for the top

Instructions

  1. 1.  Preheat oven to 350 degrees F.

    2. Cream together milk, shortening, and vanilla for a few minutes with a mixer with a paddle attachment.

    3. In a separate bowl, mix flour, baking powder, salt, and sugar.

    4.  Mix in flour until well incorporated (1/3 at a time). 

    5.  Mix in egg whites until combined (do not overmix).

    6. Oil your 10 in cast iron skillet and pour in batter.

    7.  Bake 40-45 minutes.  Serve with powdered sugar and a few fresh strawberries on top.  I also made a simple powdered sugar icing to finish it off.
